there is a way to create a new user for each site creation instead of www-data, to prevent and isolating each website?
I don’t know if this a good idea, but If I can, it could be awesome.
and next step. link that user to sftp access for files.

yes, I understand your point.
I must say to prevent another user to play in another directory instead. Each directory will be for an specific user.
