I have over 100 Wordpress sites and I’m looking at maybe using EasyEngine so I can dump the hosting panel and all of the unneeded services. Would that be doable?
Would be on a fresh server of course.

You may safely migrate from using cPanel to EasyEngine, We already have clients who have multiple sites being managed using EasyEngine. EasyEngine is more flexible than cPanel in the way that its upto date with best practices/tools, We do this by swapping out the any Easyengine stack component in case of issues regarding optimality.
