We are looking to setup EasyEngine on Azure - can someone point me to documentation or a tutorial on getting this up and running?

I believe you first need to deploy a standard Linux VM on Azure first. then you can ssh into that VM and deploy Easyengine using the normal quick install script.
This would be a similar process on Google Compute, Amazon EC2, Digital Ocean and other cloud providers.
I found this article that may help with the linux VM deployment.
