Is this still a valid tutorial for DKIM record configuration (https://easyengine.io/tutorials/mail/dkim-postfix-ubuntu/) on EasyEngine V4?

I guess I am going to setup a test server and try to setup DKIM on that server to see if it works. I fear it wont or at the very least not be configured correctly since v4 seems to using doctor for everything.

This may still apply, not sure if it can be done once on the host or if you would need to do it in each docker container.

I would try on the host first and see if you still have the desired effect.
