Easyengine isn’t so easy for me. I see notes on how to change admin email and password for WP but after changing it, then what? Doesn’t do anything.

You can define wordpress email and password in /etc/easyengine/ee.conf which is used as a template for new wordpress sites. i.e when you created a new wordpress sites the wordpress admin email and password will be used from above file
